This is a tradition that goes way back to the early times when it was illegal to be Catholic and Catholics had to be somewhat sneaky. The Priest would wear different colors and symbols in order to tell the people where the mass what going to be held and when. This is a tradition that has continued and there are different colors and symbols for each time of the year.

Last, you will notice that there most of the prayers are repeated from Mass to Mass. This is because the Mass is also a prayer in itself. Plus it is a tradition. The bible talks about how repetitive prayer is a wonderful way to pray and even Jesus used repetitive prayer. This is just the tip of the iceberg when it comes to the Catholic mass.
